Brown Rice Couscous with Peanut Sauce

Following on from my review of Lundberg's Brown Rice Couscous, here is one of my favourite ways to use it in a meal.


30g Dry Lundberg Brown Rice Couscous
150g Vegetables (your choice)
1/4 Cup of Peanut Flour
1/2 tsp Natvia
1/2 tsp Crushed Garlic
1/2 tsp Crushed Chilli
1/4 Cup of Diced Onion
Few drops of Sesame Oil


Cook the couscous as per the directions on the packet
Steam your vegetables of choice
Add the garlic, chilli and onion in a pan to brown
In a separate bowl mix the peanut flour with water until it becomes a runny, yet thick, sauce-consistency

Pour the peanut flour into the pan and heat

Plate the vegetables and couscous, and pour over the peanut sauce

Makes 1 serve
