Sugar Free Lemon & Coconut Macaroons

70g Shredded Unsweetened Coconut
30g Unsweetened Coconut Flakes
2 Egg Whites
1 Tbsp Melted Coconut Oil
1/8 tsp Salt
1/8 tsp Lemon SweetLeaf Liquid Stevia
Lemon Juice
Lemon Zest


Whisk egg whites and salt until frothy - you don't want merigue-like stiff peaks
Add the coconut and stir until it is all coated
Mix in the liquid stevia, lemon zest and a little lemon juice
Pour in the melted coconut oil and mix until well combine
Press firmly into a silicone mould
(I find this help them to keep their shape)
Pop them in a 180 degree Celcius oven for 15-20 minutes

Makes 12 macaroons
