Homemade Corn Flakes [Vegan, Gluten & Sugar Free]

For most people with very little time in the morning to make breakfast, cereal has remained a morning favourite for people around the world. The problem, however, with most cereals is their long list of ingredients - ingredients which nobody should be consuming. 

Corn Flakes (similar to Frosted Flakes) was my go-to breakfast as a kid, and the inspiration behind me attempting to make my own version. Sure, they don't taste exactly the same, but they're delicious and a far healthier alternative.


Ingredients

200g Fine Cornmeal
2 tsp Orgran Egg Replacer
6 tsp Natvia
3/4 Warm Water


Directions

Preheat your oven to 180 degree Celcius 
Sift the cornmeal and egg replacer into a bowl
Dissolve the Natvia in the warm water and mix with the cornmeal
Once the mixture forms a soft dough, transfer to a silicone mat, placing a layer of cling wrap or baking paper on top
Use a rolling pin to roll the mixture out evenly, to roughly 1mm thick


Now, you can either use a knife or some sort of shaped cutter to create any shape corn flakes you prefer
Place the tray in the oven and cook for 15-20 minutes or until crispy
I simply cooked the dough as one large rectangle and it created its own pattern


I simply broke it into smaller pieces then returned them to the warm (but switched off) oven to crisp up further without browning


Store in an air-tight container in your cupboard or pantry
