Jam Lamington Thickshake [Vegan & Sugar Free]

Today I had THE biggest cravings for lamingtons, but with the temperature in the high 30s, the last thing I wanted to do was spend the day sweltering in the kitchen. Instead, I took elements from a traditional jam lamington, added ice and created this thickshake version. 

Nice and cool, refreshing on a Summers day, bursting with flavour and completely guilt-free.


Ingredients 

1 Cup Unsweetened Vanilla Almond Breeze Almond Milk
50g Frozen Mixed Berries
2 tsp Desiccated Coconut
4 tsp Vitarium Drink Mix in Chocolate
1-2 Ice Cubes

TIP: If you have the time/patience, you could freeze the almond milk in an ice cube tray, rather than adding ice to the thickshake. 


Directions

Throw everything into the blender and pulse until smooth
Pour into a glass, sit down, put your feet up and relax
