Summer Colours: Week Three & Four

When Summer rolls around with it's (sometimes) pristine weather, we can all head out into the great outdoors to enjoy everything the season has to offer.

What's more colourful than vegetables or more Australian than a good 'ol BBQ?


Speaking of Summer and colourful, it just happened to be the theme of weeks three and four of the Sweeter Life Club's Festive Bake Off. 

While most people went with something sweet, I wanted to incorporate Natvia into a savoury meal, thus these Vegetable Skewers with Homemade Peanut Sauce were created. 


Ingredients 

Any vegetables you like! I chose three colours of capsicums, zucchini, cherry tomatoes, red onion

1/2 Cup Protein Plus Peanut Flour
2-3 Tbsp Water
3 tsp Natvia
Splash of Tamari Soy Sauce
Ground Black Pepper
Dried Chilli Flakes


Directions

Mix the peanut sauce ingredients together and refrigerate for several hours, or overnight if possible
The sauce will have thickened, and the flavours intensified


Chop all of your vegetables (except the cherry tomatoes, they can remain whole) into similar sized chunks - that way they'll all cook at the same rate


Thread the vegetables onto metal skewers or wooden ones which you have soaked in water to avoid burning in the cooking process

Cook the skewers on the barbecue, or even a sandwich press (due to the horrendous weather I had to find an alternative, and surprisingly it worked out well) until nicely browned


Serve the skewers with the peanut sauce and enjoy
