Acai & Apple Chia Pudding [Raw, Vegan & Gluten Free]

Lately I have been trying to incorporate more raw meals into my diet - not just for the nutritional benefits but simply to save time on the days I have to travel into the city. This pudding can be made the night before, ready for breakfast the next morning.

In this one meal there's healthy fats, vegan protein, carbs to get you going in the morning and a good hit of fibre for digestive health.

Using the fruit juice and acai berry is really refreshing in the Summer time and a nice change from using a nut milk. Once you've tried this version, mix things up by using the same measurements but with different fruit juices. 


1 Cup of Apple Juice
2 Tbsp Chia Seeds
1 tsp Acai Powder


Whisk the acai powder into the apple juice until all the lumps are gone
Stir in the chia seeds and place in the refrigerator
After 10 minutes give the mixture another stir to ensure the chia seeds are surrounded by liquid
Leave the chia seeds in the fridge overnight and enjoy the following morning
