Luscious Lemon Delicious Slice [Vegan, Gluten Free & Low Fat]

I'm back again with another delicious creation with the help of a Melinda's Gluten Free baking mix. Last time it was chocolate brownies, so I went with something a little lighter and fresher tasting: Luscious Lemon Delicious Slice. When they say delicious, they're not lying!

By making a just a few changes to the suggested added ingredients, I have managed to removed almost all of the fat and basically half the calories. How did I do this? Apple sauce in place of canola oil and Natvia instead of the included castor sugar are the saviours in this dish. 


Melinda's Gluten Free Goodies Lucious Lemon Delicious Slice Mix
70g Natvia for Baking
2 tsp Orgran Egg Replacer
4 Tbsp Water
6 Tbsp Unsweetened Apple Sauce


Take one teaspoon of the egg replacer and combine with two tablespoons of water
Mix the flour sachet, five tablespoons of apple sauce with the egg replacer mixture
Continue to stir until it becomes a dough, wrap in cling film and place in the freezer for 15 minutes
Take the other teaspoon of egg replacer and two tablespoons of water to create a vegan egg
Combine the lemon juice sachet, Natvia and the remaining tablespoon of apple sauce with the egg replacer and place to the side
Line a pan with baking paper, and once the dough has cooled, take 2/3 of it and press into the pan, making sure to go up the sides around 1cm to hold in the filling

Carefully pour the mixture on top of the dough

Crumble the remaining 1/3 of the dough over the top
(due to changing up the ingredients and it being a warm night, the dough didn't quite crumble, however I made sure and try to cover it evenly)

Bake in a 180 degree oven for 35-40 minutes, until nicely browned
Allow to cool before cutting into even pieces

1g protein
0.4g fat
18.1g carbs
10.2g sugar

If you have the patience, sprinkle some icing sugar over the top before serving.

These are super moist and have a lovely lemony flavour. Next time I may even add a little extra lemon juice and lemon rind since I love citrus so much.
