Dairy-Free Chocolate Pudding [Vegan & Low Fat]


In this recipe you will not find any dairy or the high amounts of fat which you would find in most pudding recipes. Even I thought it wouldn't be possible to create such a creamy and delicious pudding without milk, cream or avocado. Isn't it nice when some things surprise you?

So, what is this magical, secret ingredient? Dried figs. 

There is a myth that you can only get iron and calcium from meat and dairy sources, however if you eat the right foods on a vegan diet you won't be lacking in anything. This pudding alone provides you with 14% of your calcium and 9% of your iron needs.

With just three ingredients, this is something you can whip up whenever you need that creamy chocolate pudding hit.


Ingredients

5 Fruit for Life Dried Figs 
1 tsp Cocoa Powder (or Bob's Red Mill Roasted Carob Powder)
1/2 Cup of Water


Directions

Soak your figs in water for an hour to soften them up


Once soft, remove any hard pieces on the fig stems
Place all the ingredients in a blender and pulse until smooth


Scoop into a bowl and enjoy


Optional - Try adding a few drops of liquid stevia to make different flavours - orange or mint work perfect with chocolate
