Home Made Granola #3 [Vegan, Gluten Free & Low Fat]

It's been a while since my last granola recipe, and I must say this might just be the best one yet. Not only can this be enjoyed by those of you who are vegan like I am, but it is safe for celiacs or gluten-sensitive people and it's low in fat - less than 2g per serve.

Enjoy it as a snack, spinkled over fruit or yogurt, or even as a cereal with some homemade nut milk. The clusters of seeds, grains and fruits are so flavourful, you'll be going back for seconds.

Ingredients

3/4 Cup of Gluten Free Oats
80g Abundant Earth Puffed Rice
80g Abundant Earth Puffed Corn
40g Bob's Red Mill Dried Tart Cherries
1 Tbsp Chia Seeds
30g Fruit For Life Dried Goji Berries
20g Fruit For Life Dried Blueberries
20g Fruit For Life Roasted Coconut Chips
50g Pureharvest Rice Malt Syrup
3/4 Cup of Apple Juice


Directions

Combine all the dry ingredients (except the goji berries, blueberries and coconut chips) in a bowl
Heat up the rice malt syrup and add to the apple juice
Pour this mixture into the dry ingredients, stirring until it is all combined
Spread the granola on an oven tray and place in the oven
Cook at 170 degree Celcius (fan forced) for 10 minutes
Remove from the oven, stir the granola and return to the oven for a further 5-10 minutes
Allow to cool before stirring through the goji berries, blueberries and coconut
Transfer the granola to a air tight container

Makes 15 serves
