No-Bake Vegan Caramel Tarts

My mum loved the Vegan Chocolates with Gooey Caramel Centres that I made a few weeks ago, so for Mother's Day I decided to make her some more raw vegan desserts.

These no-bake vegan caramel tarts took me less than 10 minutes to throw together. A few simple ingredients is all you'll need to make these for yourself or a loved one. 

It's really quite amazing how versatile dates can be, and that by combining them with only one or two different ingredients, they take on completely opposite, but complimentary, textures and flavours. 

Who needs the bother of pastry and worrying about caramel burning when just five ingredients and a blender can produce these beauties?


Tart Base

12 (70g) Dried Medjool Dates
5g Desiccated Coconut
5g Puffed Rice

Caramel Filling

3 (35g) Fresh Medjool Dates
10g Coconut Sugar
Splash of Water


Take your tart base ingredients and pulse in a blender or food processor until it forms a sticky mixture
Divide the mixture into five even-sized balls and using your hands mould into a tart shell 
Set aside and add the caramel filling to a blender and pulse until smooth
Spoon the caramel into the tart shells and serve
