This week's Monday Munchies is not for one recipe, but three: Peppermint Protein Chocolates, Double Choc-Mint CHOBites and a Choc Mint Protein Shake. All are full of good fats, high in protein and contain no added sugar.
It may seem like a lot of work, but bare with me, it's worth it in the end.
The best part is that no cooking is required, just cooling in the fridge/freezer, so you can get on with other things while you wait for recipes one and two to set.
Peppermint Protein Chocolates
Ingredients
4 scoops of About Time Chocolate Protein Powder
90g Melted Coconut Oil
3 Droppers of SweetLeaf Peppermint Liquid Stevia
3/4 cup Cocoa Powder
Directions
Mix all the ingredients together until it forms a runny mixture
Add a little more protein powder or coconut oil if your mixture is too wet or too dry
Pour into a silicone mould and refrigerate until set
Makes 30 chocolates
Choc Mint CHOBites
350g Plain 0% Fat Chobani Greek Yogurt
2 Droppers of SweetLeaf Peppermint Liquid Stevia
10 Peppermint Protein Chocolates
Directions
Pulse the peppermint protein chocolates in a blender until they're a fine crumble
Mix with the Chobani and liquid stevia
Add to any small silicone moulds or ice cube trays you may have
Place in the freezer for a few hours until set
Makes 40 Choc-Mint CHObites

I find that these Choc-Mint CHObites add some creaminess which is usually lacking when protein powders are mixed with water. Not only that, but they add texture, thickening the mixture and adding an extra hit of protein. All bonuses in my book!
